What makes Doctor Beer’s beer & cheese pairing different?
Our pairing stands apart through an exclusive collaboration with Catherine, Brussels’ most prestigious artisanal cheese specialist. With decades of expertise in selecting the finest Belgian and European cheeses, Catherine hand-picks each cheese specifically for our sessions, ensuring peak ripeness and exceptional quality. Combined with our certified sommelier’s expertise in both zythology and gastronomy, you get rare artisanal selections you won’t find in typical tourist experiences.
How long does the beer & cheese pairing last?
The standard beer & cheese pairing lasts 2 to 2.5 hours. This gives you enough time to discover multiple cheese varieties, explore complementary beer styles, master professional pairing techniques and learn about Belgian cheese-making and brewing — all without feeling rushed. Premium and private sessions can run up to 3 hours.
Is the pairing suitable for beginners?
Absolutely. Our certified sommelier adapts every session to your knowledge level. Whether you’re new to craft beers and artisanal cheeses or already an experienced gastronome, you’ll enjoy this educational and personalised discovery. We teach the fundamental pairing principles — complementary, contrasting and cutting flavours — from the ground up.
What cheeses and beers will I discover?
You’ll explore rare Belgian artisanal cheeses including aged Walloon hard cheeses, creamy Flemish soft cheeses, blue-veined abbey cheeses, washed-rind regional specialties and farmstead goat cheeses. These are paired with premium craft beers: Trappist ales from monastery breweries, traditional Lambics and Gueuze, Belgian Abbey beers, Saisons, Tripels, Quadrupels and exceptional craft selections. The exact line-up changes regularly with Catherine’s seasonal selection.
Where does the beer & cheese pairing take place?
At Doctor Beer Brussels, Boulevard Anspach, 1000 Bruxelles — three minutes’ walk from the Grand-Place and Manneken Pis. Easily accessible by metro (Brussels Central, lines 1 & 5), tram (lines 3 & 4) and bus.
How do I book a session?
Booking is by email (info@doctorbeer.be) or WhatsApp (+32 486 23 68 36). Because each session features rare artisanal cheeses that need to be sourced fresh from Catherine, we don’t take online instant bookings for this experience — we confirm each booking personally to make sure your selection is at peak ripeness on the day.
Can I book a private beer & cheese pairing for my group?
Yes. We offer private sessions for groups from 6 to 25+ people — perfect for team-building, corporate events, birthdays, hen and stag parties, romantic couples experiences or any special occasion. Available in English, French, Dutch and Spanish. Contact us via WhatsApp +32 486 23 68 36 or info@doctorbeer.be for a tailored quote.
Are there vegetarian options?
Yes. Most Belgian artisanal cheeses use vegetarian rennet, and we always confirm cheese production methods with Catherine. If you have specific dietary requirements — vegetarian, lactose intolerance, allergies — please tell us at booking so we can curate a suitable selection while maintaining the exceptional quality of the experience.
How far in advance should I book?
We recommend booking at least 48 to 72 hours in advance to ensure availability of rare artisanal cheeses, especially for weekends. For large groups (15+ people) please book at least one week ahead to guarantee optimal cheese freshness and personalised service.
