First encounter with Brett-Elle by Lambiek Fabriek, the creation of Jo and Jozef, two enthusiasts from Sint-Pieters-Leeuw who have been reinterpreting geuze since 2016. Their motto, “No Brett, No Glory,” sums up the whole approach: turning every blend into a finished work.

The New Masters of Pajottenland

Since 2016, Jo and Jozef have worked traditional lambic as a living material. Their blending technique combines young lambics (1 to 2 years) with mature lambics (4 years), for a sought-after balance between vivacity and complexity.

The Visual Analysis

The colour is clear and golden, topped with a fine, elegant off-white head. The effervescence is controlled, true to the style.

The Nose

The nose is expressive: a fruity, funky explosion, wild notes of wood and stone, noble stable and fresh hay. The authentic Brett character signs the Pajottenland terroir.

On the Palate

The attack reveals a vibrant lemony acidity and a distinct bitterness, carried by stone fruits and a light fruity sweetness — lime, wild berries, Granny Smith apple. The light-to-medium body runs through touches of honey, over an exceptional length that reveals the blending talent.

The Perfect Pairing according to Doctor Beer

I gladly serve it with a 24-month Comté: the cheese’s umami answers the geuze’s acidity, its buttery notes contrast with the wild Brett, and the shared length extends the finish. Otherwise, it stands on its own, a taste revelation among lambic lovers.
