Chimay dorée
📖 The Chimay Blonde is the latest from Chimay and is also the lightest in alcohol in the range. The "patersbier" (monk’s beer) is one of the oldest recipes of the abbey. Indeed, only the monks, their hosts and a few local inhabitants could taste this beer brewed with water from the water table below the abbey.
Its name comes from the capsule which was golden to differentiate it from other beers and has been marketed since 2013.
👀 The Chimay Blonde is a slightly orange golden yellow colour and is cloudy if served with its yeast.
Its foam is fine, white and medium tenacious and has a fine sparkle.
👃 On the nose, despite its low alcohol content, the aromas are present.
There are notes of apples, pears, coriander and herbaceous notes. Its floral aroma is very appreciable.
👄 In the mouth, the complexity denotes with its low alcohol level.
We find fruity flavors, coriander, malt and at the end of the mouth spicy notes with a slight bitterness.
We are facing an easy to drink beer, well balanced with body and freshness.
I advise you to accompany this beer with a young hard cheese with raw cow’s milk.
